摘要：
PROBLEM TO BE SOLVED: To provide a microorganism of the genus Pseudomonas having an ability to degrade caffeine even in the presence of the caffeine at a high concentration which has hitherto been difficult to degrade without producing a de-methylated substance of the caffeine to the outside of a microbial cell, to provide a method for removing the caffeine by which the caffeine that is a mixed main substance is removed from an extract solution of a plant containing polyphenols by actions of the microorganism and degraded in a simple step to allow wide uses in foods and drinks, health care/medicines, cosmetics, etc., and to further provide a simple method for producing a polyphenol-containing food free of the caffeine using the microorganism.
SOLUTION: The microorganism of the genus Pseudomonas has the ability to degrade the caffeine without producing the de-methylated substance of the caffeine to the outside of the microbial cell.
