“水揪片”俗称“鳖跳崖”,是候马、临汾一带人们熟悉的地方传统小吃。其来历要追溯到清末民国初年一对农村夫妇吵架之事。一天,刘三下地回来,又饿又累,因他老婆还没有做熟饭,两口子就吵闹起来,各说各有理,结果两人换了工,刘三操持家务,老婆下地干活。
中午时分,刘三睡觉醒来,急忙生火做饭,不料面和硬了,就一边往面上倒水,一边揉面,不料面越来越软,无法上案擀面条,就干脆用手揪成薄片投入锅中。谁知煮熟捞出后,配以浇头,软绵筋道,非常好吃,就起名叫“鳖跳崖”。

He considered that the dough cannot be used to make noodles. At the end, he toke the dough to pull the dough pieces by hand into the pot. After boiled it, and matching with seasoning, it is very delicious.
主料:面粉500克,水300克
辅料:葱、姜、蒜、肉、蒜苗、花椒
调料:  食盐10克、番茄酱、五香粉、酱油、味精、陈醋

制作方法
1.面放入盆里,将盐放入面粉,搅拌均匀,加水,边加水边捻,将面打成面穗。
2.用手掌根压住面,从外向里揉,大约揉8分钟左右。检验面是否柔好:用手指按面,按凹陷处5秒钟能自动弹起,说明面已柔好。将面揉成细长面坯子,用塑料袋套住(保鲜膜裹住也行),醒30分钟左右。
3.将醒好的面再揉2分钟,然后放在案板上将面擀开,面的厚度大约为5mm左右。
4.将擀好的面切成宽度大约为3cm左右的长条。在切面前先在上面撒点干面,防止切好的面又粘住。
5.将切好的长方形面片用手揪成2-3毫米厚度,一分钱硬币大小的不规则面片。
6.面在锅中煮大约2分钟即可食用,在煮面过程中要搅动,以免面糊锅底。将煮好的面捞在放有少量凉水的盆里,搅动面片,然后将水倒掉。
7.锅里放油,油开后放花椒、葱、姜、蒜,然后放蒜苗和肉,放盐,味精,酱油,五香粉,炒大约5分钟左右后将面片放入锅里一起炒,同时放适量的番茄酱。再炒2分钟就可以出锅了,别忘了在出锅前淋点老陈醋。
Making Method
1. Take some salt into the flour and add some water to mix it.
2. Knead the dough from outside to inside for about 8 minutes until the dough are smooth and elastic. Cover and place for 30 minutes.
3. Put it in the kitchen board to keep kneading for 2 minutes. The thickness of dough is about 5mm.
4. Cut into the long strapping with 3 cm width. Sprinkle some dry flours before cut the dough in order to prevent from sticking each other.

6. After boiled for about 2 minutes, keeping stir. And then, take it into the cold water, and stir for a while.
7. After the oil is hot, put into Sichun pepper, scallions, ginger, garlic and other seasoning with salt, MSG, soy sauce, five spicy peppers, and add little pieces of dough to stir-frying for about 5 minute. At the same time, add some tomato sauce and aged vinegar, just finished.
